Kayu Puti (meaning white wood in Indonesian) is elegantly highlighted with white and neutral tones alluding to a sense of an exclusive private beach hideaway where patrons are transported away to a fantastical realm set against nature’s backdrop.
Enveloped in the essence of nature, natural light filters in through the numerous French window adorning Kayu Puti. With the onset of twilight, the specialty restaurant turns into a kaleidoscope of colours as the sun spectacularly sets against the sparkling horizon of the Andaman Sea. The visual display of nature’s beauty is further heightened by the discerningly placed antique collections of wooden décor curated from the Dutch Embassy in Yangon.
Exceptionally fresh ingredients sourced from around the region form the basis of Kayu Puti’s East meets West refined cuisine. Executive Chef Gaetan Biesuz displays his culinary prowess by imbuing much-loved Asian food traditions with contemporary sophistication and modern techniques; reinterpreting familiar recipes into sumptuous tapas, inventive mains and reconstructed dessert creations.
Signature recommendations include the Andaman tiger prawn ceviche with red tiger milk, sweet potato and prawn chili; Langkawi spiny lobster and prawn with local herbs infused bisque, a la plancha tiger prawns, tomato ginger chutney and coconut kaffir lime cream; Andaman red snapper, seabass, clams served in Boullaibaisse-style with local herbs, fennel and saffron potato. For desserts, delight in Langkawi Black Bee Honey with banana in honey, coconut Ivoire Valrhona chocolate mousse, honey gel and Teh Tarik ice cream; and Kaya and Kopi served with kaya toast, whipped cream, kopi panna cotta and kopi syrup.
